Arroz con Leche

 Rice Pudding

Jorge: My wife Mary just can't get enough of this dessert!

Glenn: Whether you eat it plain, like the recipe below -- served warm and bursting with cinnamon aroma and flavor...

Jorge: ...or you pack your rice pudding with juicy raisins, arroz con leche is the perfect ending to any Cuban meal.

Glenn: It is a true Cuban comfort food.

Cook the rice with water, lemon rind, and cinnamon stick until soft. Remove the lemon rind and cinnamon stick and drain off any excess water. (Most of the water should have been absorbed into the rice.)

Add milk, salt, vanilla extract, and sugar to rice and cook over low heat, uncovered, stirring occasionally until thick, about one hour.

Sprinkle with cinnamon and serve.

Serves 4-6

1/2 cup uncooked white rice
1 & 1/2 cups water
1 lemon rind
1 cinnamon stick
1 quart whole milk
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup white cane sugar
Cinnamon, ground
